Do you have price history from before I added the domain?

No. History starts the day you add the name. That is enough for quarterly client reviews: every listing move, price cut, and auction appearance while you were watching, with the percent change when both sides are prices.

If a client moves on from a name, am I stuck paying for that slot?

No. Paying accounts can swap any watched domain for a different one, as often as they want, at no extra cost. The old name stops being monitored and its history is deleted. The new name starts immediately on the same seat. Trial accounts watch one name and cannot swap until they subscribe.
